Lemons are a kind of citrus fruit and are also easily recognized by the vibrant yellow color with their rind/skin. Lemons are usually prized because of their sour veggie juice, which is usually the prime use of the fruit. However, the rest of this lemon, including it's skin/rind are widely-used in a variety of dishes. Similar to the lime within flavor, the lemon does lack this lime's feature tartness. As mentioned previously, lemons certainly are a citrus fruit therefore are in the genus Citrus which all lemon or lime fruits certainly are a member.
