Author Meena Mistry had a successful career in the field of life insurance in London, UK for many years. During this time, she also creatively developed tastes of well-balanced vegetarian dishes through unique selection of herbs and spices with a focus on nutrition and good eating habits. In 2006, Mistry located to the US, where she continued to develop unique vegetarian dishes. In 2012, she published her first book "Spicy N Easy" to cater for everyone including those who have a busy life and prefer homemade tasty, healthy and interesting meals. She has also participated in and supported a high school teachers' wellbeing program from nutrition and healthy eating perspectives. Mistry realizes the importance for creating a vegetarian meal with a timely effort and has successfully and creatively developed skills for combining vegetables in unique ways for people to enjoy. She has continued to evolve in this arena endlessly.
