There are thousands upon thousands of food service establishments; from a hot dog stand to dining at The Waldorf Astoria; rooms and cafes employing thousands of people across the globe. To gain benefit of what I have repeatedly tried to emphasize throughout this book, comment and suggestion offered is designed to assist those who by choice, or by default, find themselves entering and walking the halls of this business; a journey on a long and winding road that leads to a self fulfilling prophecy: was the ride worth it? I believe so. Many books have been written about the evolution of the hospitality field and the food service industry. It's continuing evolvement; respected work of its own complexity; a business that demands dedication, pride of accomplishment, and cradling of a never ending and underlying love to please. I am proud to say I served and lived a good life because of it.
